Stuffed PeppersIf you’ve ever struggled to think of something to go with your dinner, you’ve come to the right place.  Yesterday we had steak marinaded in coffee (that’s a blog post for another time!) with stuffed peppers, and they were a true delight!

Bursting with flavour and simple to make, all we did was cram spinach, sun-dried tomatoes and cream cheese into the peppers and bake in the oven.  With hindsight, It would have been a good idea to put some cous cous in there too to absorb some of the cream cheese (to make it less runny). I’ll let you know how that goes on Twitter when I make these again.

And for one final tip with regard to making sure the stuffed peppers remain upright in the oven – because the skin of the peppers will go softer, the cocktail stick tripod method pictured doesn’t work too well!  The best idea is to put each pepper in a ramekin and bake for about 15 minutes.

Turkey and Spinach Lasagna RecipeLasagne is a great, wholesome dinner that 9/10 times leaves you feeling pretty satisfied afterwards. However, it can also be pretty unhealthy as a consequence.

Even if we were to switch to the extra lean variety of beef mince, this still has about 4.5g of fat per 100g, about half of which is likely to be saturated. So my suggestion: switch to turkey mince!

You’ll want to chose the Turkey breast mince as it is sometimes available in thigh mince version also (which is slightly higher in fat).  The rules are then simple, just add the turkey when you would have added the beef and cook as normal, you’ll also be surprised at how turkey mince doesn’t dry out half as much.

We used turkey mince for this which is great because its very low in fat and cheaper and minced beef.

You will also need the following ingredients:

Meat Mixture:
– Olive Oil (to fry)
– x2 Onions
– Garlic (x2 cloves)
– Bacon (x4 rashes)
– x1 Carrot
– Celery (x2 sticks)
– Turkey Mince (500g)
– Red Wine (150ml)
– x2 Tin Chopped Tomatoes
– Oregano (x2 tsp)
– Salt & Pepper
– Spinach Leaves (150g)
– Cheese (25g)
– Pre-cooked Pasta Sheets
White Sauce:
– Milk (600ml)
– Flour (50g)
– Butter (50g)
– Salt & Pepper
Or 1 jar of White Sauce
