Chicken Nuggets RecipeI’m not sure about you, but there are some food types that I’d simply not want to know what goes in them – sausages, burgers and chicken nuggets (to name a few). So I present to you my Chicken Nuggets Recipe which is really simple to prepare and cook.

The great thing about making them yourself, is that you can make the nuggets from chicken breasts and add all kinds of things to the breadcrumbs to add flavour (herbs and spices etc).

All you need is Chicken, Breadcrumbs, Egg and Flour (and you can see the full instructions for the Chicken Nuggets Recipe here).

And if you’re anything like me and like your food hot and spicy, add some Chilli Powder and Worcester Sauce to the breadcrumbs to give them a real kick.

The Chicken is stuffed with Cream Cheese and Chives and Wrapped in Parma Ham, whilst having a drizzling of Olive Oil, Garlic and Oregano between the Chicken and Parma Ham.

Chicken wrapped in Parma HamIf your cooking for mates, or simply looking for a recipe to jazz up chicken and make it taste great, then you should try my recipe for stuffed chicken breast wrapped in parma ham.

It’s easy to cook and the parma ham helps keep the chicken moist when in the oven. All you need to do is mix chives with cream cheese and stuff this into each chicken breast.

Then brush the chicken with oil, marjoram/oregano and garlic, then wrap with the parma ham.  Sprinkle the chicken with mozzarella half way through cooking then it’s done – A real crowd pleaser!

Sometimes I get ‘eating block’ when I’m struggling for inspiration at the supermarket. I want to try something new but there’s a debate going on between my stomach and my head!

Stomach says “Just buy it and feed me”, head says “Well hang on, how can I make this more interesting to eat?”

So before you start going mad down a supermarket isle, it’s worth remembering that you can jazz most things up with pre-prepared breadcrumbs, yes, plain-old breadcrumbs!

So you’ve bought a plain chicken breast, salmon fillet, piece of pork or a bag of white fish and you don’t know what to do next, well, you can bread them. Simply have 3 separate bowls with one of the following in each:

  • Flour
  • Egg
  • Breadcrumbs

Dip your piece of meat/fish in the flour, then the egg, then the breadcrumbs and cook in the oven – simple! If that’s not enough, it tastes even better if you mix a little chilli powder (or other herb of your choice) in the breadcrumbs.

I was cooking (and experimenting with) one of my favourite recipes today – Chicken wrapped in parma ham and decided to play around with the Parma Ham.

Before wrapping the Chicken, I lightly brushed the Parma Ham with Balsamic Vinegar, then wrapped it around the Chicken. And blimey, what a difference! It made the chicken more flavoursome and Parma Ham nice a crispy.

Go on, give it a try…

This Recipe tastes great and is simple to make.  All it takes is wrapping chicken with Parma ham and rubbing some garlic and marjoram in-between.  Why stop with chicken?  You can use this technique with anything! View our recipe for chicken wrapped in parma ham and make sure you have the following:

– Chicken Breasts (x2)
– Parma Ham (x6 slices)
– Marjoram (x1 tsp)
– Garlic (x2 cloves
– Olive Oil (x1 tbsp
– Peas (to serve)

So I was following a recipe the other day, it was roasted veg layered with chicken and a cheese sauce on top (tasted pukka by the way). The recipe was for a whole chicken – poached in a pan of simmering water for one hour. I’ve always thought poached chicken would taste kinda, well, disgusting. However, it turned out to be the perfect way to cook a chicken.

Poaching is great because it’s a healthy way to cook (no oil), the skin is easy to remove, and the meat literally just falls of the bone. One thing I hate about cooking a chicken is getting the meat off and poaching totally solves the problem.

It’s easier and clean up is a whole lot easier afterwards, and if you can be really bothered, you can use the water afterwards to make chicken stock.

– x4 Chicken Breasts
– Flour (100g)
– Breadcrumbs (75g)
– x1 Egg
– Peas (to serve)
