This weekend was one of the first opportunities of 2013 that many Brits took to getting out in the garden and lighting the BBQ.  Although it’s nice to have seasons in England, the wet and cold ones don’t half drag on, but this weekend was a scorcher and I certainly got my moneys worth!

Firstly, you can’t beat a cooked breakfast on the BBQ – that includes Sausage, Egg, Bacon, Tomato and Toast. Egg you say? Simply stick a frying pan on the grill of the BBQ and cook the egg from there. Then throw your Sausages, halved Beef Tomatoes, Toast and Bacon onto the grill and leave them to cook and soak up that lovely charcoal flavour.  If you’ve yet to try toast on the BBQ, try it this weekend and I promise you it won’t be the last time!

Next, the standard! Mates round for Burgers, Sausages, Chicken etc with cool crisp cider. Stack the BBQ with enough fuel to see you through, whip up the potato salad and enjoy the outdoor entertainment. I’m sure most of us have had the experience of putting something  on the BBQ followed by a flurry of flames from beneath – cremating your food in an instant – if so, it’s usually because the food is high in fat. I like to have  a little bit more control when it comes to burgers and sausages because sometimes  you really don’t know what goes into them! BBQ Salmon RecipeFinally, to finish off the Bank Holiday weekend, we decided to do a quick stir-fry with Salmon Fillets. In my opinion, the smoky flavour from a BBQ enhances the taste of most things, but nothing more so than with fish. Grilled for about 5 minutes either side, we enjoyed the incredible flavour of freshly grilled salmon fillets on a bed of quickly fried vegetables.

If you’re new to BBQing, check out my ‘How to BBQ’ article that I wrote a while back. It’s full of tips on setting up your BBQ, prepping and marinating your food and finally cooking it all. One thing I would say – you can’t beat the flavour of solid burned fuels such as charcoal or wood, so if you have  a gas BBQ, give it a go with solid fuel. If you don’t want to splash out on a new BBQ, use an old kitchen sink – a little tip I learned from my Granddad who’s still BBQing into his old age (something this waistline can also confirm)!

Warren NashWell it’s been about 6 months since I was one of the lucky winners of the YouTube Next Chef competition, so I thought I’d provide my loyal followers with a recap of what’s been happening over the past 6 months and what you can expect to see for the future of FitBrits.

After receiving all our new recording equipment, and whilst having weekly seminars on Google hangouts (with some great guest speakers), each assignment was to create a new cooking video that was along a particular theme.  Check out our playlist of assignments.

Hopefully you can see how each video has progressed the more we do, and we hope you’ve enjoyed them.  We even had a go at using the green screen for a Mojito Recipe and I tried my hand at live commentary for our Peanut Butter Nutella Cookies Recipe – you can be the judge of how well that went!  I think the key learning there was always plan what you’re going to say!

Since then, we’ve recorded a series of Jubilee themed recipes as well as other great dinnertime dishes.  We still want your suggestions on what else we should include for our Summer line-up of recipes, so submit your suggestion here.

Lastly, the FitBrits.com website was redesigned in December with loads more content and a fresh new look, so we hope you like it.

Well, I’ve been in Cape Town SA for 10 days now and I’m due back next week. I feel I just had to blog about some of the food I’ve been eating over here.

Trying not to rub it in, but its summer over here which means lots of food cooked outside and on the BBQ. The best meat of all is Ostrich meat. It’s a red meat that tastes simply sublime and contains very little fat. Ostrich is the new cow!

Luckily, ostrich meat is becoming more popular in the UK, you’re most likely to find it at markets (in both steak and minced form).

Fresh fruit and veg is also in ample supply, so I’ve been making plenty of fruit smoothies – perfect for balancing out the after affects of South Africa’s famous wines from the night before!

Best get back to the sun, its waiting for me!

 

So you’re a couple of months into university life now and are having to fend for yourself! Check out our Student Survival Guide if your still struggling with some of the kitchen basics.

Equipment – Don’t go and buy a 12-piece crockery set, all you’re soon-to-be housemates will be doing the same. Then you’ll have one mighty large washing up problem!

However, there are a couple of things you should make sure you have. Invest in a casserole as this can be used for anything on the hob. And a good quality large knife – this will handle anything. More on utensils.

Planning – When writing your shopping list, plan what dinners you’re going to eat for that week – then you’ll know exactly what to get. You’ll also save from making endless trips to the corner shop for things you’ve forgotten.

Saving at the Supermarket – Don’t impulse buy at the local shop – they ARE more expensive. Do big shops at the supermarket once per week or fortnight. Don’t be frightened at the initial cost of bulk buying meat – it WILL pay off in next weeks food shop (remember to freeze the meat you don’t need that week).

Bulk Cooking (The REAL Money Saver) – You don’t have to be cooking for someone in order to bulk cook. If you can all cook for each other once a week then great, however, if you’re cooking just for yourself, cook simple recipes in bulk and freeze the leftovers. An extra freezer may come in extremely useful here. We know you need to save money, so log onto your local Freecycle Network as freezers are always going for free on here.

Before you know it, you’ll have stockpiled a whole host of dinners in your freezer ready to re-heat without any hassle.

Lunch Time – If you can, make sandwiches and take them into Uni wherever possible. Don’t worry, your student counterparts won’t look down on you for this.

Extending Shelf Life – If you’re going to be making smoothies, mix and chop the fruit and freeze the mixed fruit in separate sandwich bags. You can also chop and freeze veg and bread too.

Health and Nutrition – And if that’s not enough information to get you started cooking as a student, don’t forget the governments recommended Eatwell Plate. This will be even more important considering the amount of drink you’re likely to consume in the next 3-4 years!

Slow Cookers (or Crock Pots) are back and are a great way to cook hassle-free, tasty food. Dishes that benefit are those with longer cooking times such as: Stews, Curries and Casseroles. Check out our quick guide for Slow Cooker Recipes below.

Not for the Slow Cooker – It’s best to steer clear of fish and pasta in the slow cooker to avoid the risk of over-cooking and soggy-ness – nobody wants that!.
