Mexican Chicken Meal Prep Recipe

  • 2 Chicken breasts
  • 150g Salad leaves
  • 100g Cherry tomatoes
  • 25g Jalapenos
  • 20g Salsa
  • 20g Guacamole
  • 20g Reduced fat mayo
  • 1 Wholemeal tortilla wrap


Here’s a great recipe perfect for beginners. If you’re looking for meal prep for weight loss, my low calorie Mexican chicken salad is just what you need.

  1. Grill the chicken until cooked through. Slice into strips then chunks.
  2. Add the chicken to the salad along with the halved cherry tomatoes and chopped jalapenos.
  3. Mix the salad and split between 4 food containers.
  4. Top each meal prep with salsa, guacamole and mayo.
  5. Lightly toast the tortilla wrap and break into pieces. Split between the food containers.
  6. Store in the fridge for up to 4 days and enjoy.
