  • Roasting Potatoes
  • Oil or Goose Fat
  • Semolina (x4 tbsp)
  • Fresh Rosemary

Directions

There's nothing more satisfying than really crispy Roast Potatoes. I use Semolina in this Roast Potatoes Recipe to make these great tasting crispy spuds.

  1. Peal the Potatoes then slice them diagonally (so they have a bigger surface area to crisp up).
  2. Put a pan on the hob and boil the Potatoes for 4 minutes. In the meantime, heat some Oil or Goose Fat in an oven dish - in the oven at 210c/410f.
  3. Drain the Potatoes then return to the pan (with no water).
  4. Sprinkle a generous portion of Semolina over the Potatoes with some rosemary. Return the lid and shake vigorously to fluff up the Potatoes.
  5. When your Oil or goose fat is hot, pour the Potatoes in and return to the oven for 45-60 minutes, or until golden. Remember to turn the Potatoes half way through cooking. Then serve.
