Leftover Turkey Curry Recipe

  • Olive oil
  • 1 Onion
  • 2 Garlic cloves
  • 1 Can chopped tomatoes
  • ½ tbsp Curry powder
  • 1 tbsp Plain flour
  • 1 Chicken stock cube
  • Leftover cooked turkey

Directions

My leftover turkey curry recipe is perfect for using up the meat from Christmas dinner. It’s super easy to prepare and is full of Indian style flavours.

  1. Slice the onion into half-moons and finely chop the garlic.
  2. Heat some oil in a saucepan then fry the onion and garlic for 5 minutes.
  3. Add the tomatoes, flour, curry powder and crumble in the stock cube. Mix together.
  4. Stir in the leftover turkey and top up the curry with water until the ingredients are just covered.
  5. Season and leave to simmer for 20-25 minutes.
  6. When you’re happy with the consistency of the sauce, serve with rice and enjoy.
