  • 150g Bacon
  • x2 Onions
  • x2 Carrots
  • Bunch of Thyme
  • x2 Garlic Cloves
  • x1 Veg Stock Cubes
  • Bottle/Can of Guinness (500ml)
  • Plain Flour
  • x1 Egg Yolk
  • Bag of ready mix Shortcrust Pastry
  • Oil (to fry)

Directions

Check out this winter warming recipe for a Steak and Guinness Pie. Made with Lamb and Guinness, it's easy to make and a great tasting pie.

The filling

  1. Roughly chop the Bacon, Onions, Carrots and Garlic cloves and fry for 5 minutes with a little Oil in a casserole dish.
  2. Add in the Stewing Lamb and fry until browned.
  3. Into the casserole, crumble in the Stock Cube and add the Thyme by running your fingers along the sprigs so the leaves fall in.
  4. Finally, pour in the Guinness and leave to simmer for approximately 1 1/2 hours (or until the sauce has thickened nicely).

The pie

  1. Once the filling is ready, take the ready mix Shortcrust Pastry and prepare according to the instructions on the pack. Use the Flour to keep it from sticking.
  2. Take 2/3 of the dough, roll it out, then line the inside of an oven dish with the pastry.
  3. Pour the filling into the pie then roll out the remaining 1/3 of pastry and place over the top of the filling.
  4. Trim the pastry where necessary then press a folk around the edge of the pie top in order to make a seal.
  5. Brush the top of the pie with the Egg Yolk then cook in the oven on 180c for between 30-45 minutes (or until golden brown).
