Pumpkin Pie Recipe

  • 600g Pumpkin
  • 320g Pre-prepared shortcrust pastry
  • 150g Dark brown sugar
  • 2 tsp Mixed spice
  • 2 Eggs
  • 50g Butter
  • Icing sugar (to dust)

Directions

Thanksgiving is on it’s way and what better dessert to make than my pumpkin pie recipe. Made from real pumpkin, this tasty dessert is easy to prepare and great for kids too.

  1. Preheat the oven to 180c/350f.
  2. Peel and deseed the pumpkin. Chop 600g of pumpkin flesh into 1-inch squares.
  3. Bring some water in a saucepan to the boil then simmer the pumpkin for 20 minutes.
  4. Meanwhile, roll out your pastry to fit a 24cm tart tin.
  5. Grease the tin and line with the pastry. Prick with a folk and fill with baking beans.
  6. Pre-bake the pastry for 20 minutes.
  7. When the pumpkin is done, drain as much water from the pumpkin as you can then blitz into a puree.
  8. Mix in the sugar, mixed spice, egg and butter.
  9. When the pastry has finished pre-baking, remove the baking beans and fill with the pumpkin filling.
  10. Bake in the oven for 40 minutes, until the filling has risen and the pastry is golden.
  11. Leave to cool then sprinkle with icing sugar and enjoy.
