Chicken Caesar Salad Recipe

Chicken Ceaser Salad Recipe

  • 1 Romaine Lettuce
  • 20 large Croutons
  • 50g Parmesan Shavings
  • 2 Chicken Breasts
  • 4 tbsp low fat Mayonnaise
  • 4 Anchovy Fillets
  • 1 Garlic Clove
  • Juice from 1/2 a Lemon
  • 1/2 tsp English Mustard

Directions

So I was asked by Central England Co-op as part of their Easy Eating campaign, to come up with a tasty dinner time meal that isn't complicated to make. This is just up my street as I love creating tasty meals from scratch that are easy to put together. With it being Summer, I thought what's more refreshing than a Chicken Caesar Salad Recipe? Don't worry, the dressing is really easy to make, so here's how to do it:

  1. We'll start by preparing the dressing. In a food mixer, throw in the Garlic, Anchovy Fillets, Lemon Juice, Mustard and Mayonnaise - blitz until smooth (that's your Caesar dressing made)!
  2. Next, wash the Lettuce then tear it up into a large mixing bowl.
  3. Crumble the Parmesan over the Lettuce then throw in the Caesar dressing and Croutons - thoroughly mix everything together with your hands.
  4. Finally, prepare the Chicken by cooking it in a grill or pan until there is no pink in the middle, and then slice into strips.
  5. Plate up the Caesar Salad from the bowl then lay the Chicken over the top.
