How to thicken soup

There’s nothing worse than thin watery soup. So check out my guide on how to thicken soup. I show you two methods by making a roux (with flour) and using potato. None of my methods use cornstarch.

Start by bringing your watery soup up to simmering point. Then follow one of these two methods:

Make a roux

  1. How to thicken soupFor each serving of soup, in a separate saucepan melt 15g of butter.
  2. Add 15g of plain flour and whisk over a low heat until you form a paste.
  3. Pour the simmering soup into the roux, whisk and briefly simmer to thicken, then serve.

Use a potato

  1. How to thicken soupCut up one small peeled potato and boil for 20 minutes in a separate saucepan.
  2. Drain then blitz the potato until smooth using a hand blender.
  3. Add the blended potato to the soup, whisk and briefly simmer to thicken, then serve.
