Stuff I've been up to this month!

First video collaboration

So this month saw my first ever video collaboration since joining the Tastemade food network. It was with Jana Gerber from all the way over in Switzerland.

We joined forces by both coming up with a Christmas themed recipe that would compliment each other nicely. With Eggnog being American and as someone who quiet enjoys it, I thought I'd bring it over to the UK and share my home made Eggnog Recipe. Coupled with that is Jana's Chocolate Hearts cooking video. I've given her recipe a go and I must say they go perfectly with Eggnog.

So be sure to check out the cooking videos and give each of the recipes a go for the Christmas season.

New winter recipe

Following on with other recipes suitable for this time of year, check out my latest winter-warmers recipe for a Butternut Squash, Sweet Potato, Red Onion and Sesame Seed side dish (bit of a mouthful)! I've always loved the combination of Squash and Sweet Potato especially at this time of year. The Sesame Seeds finish it off nicely and the dish goes really well with roasted chicken and a drop (or lashing if you're like me) of gravy!

It's a simple one to do so be sure to give it a try.

How to make Taco Fries

One last thing I must tell you about as it's a recent discovery for me - Taco Fries! Some find it shocking that I've never heard of these before but I'm pretty sure they're not very popular over in the UK. I was on one of my recent trips over to the west of Ireland last week where I was introduced to Taco Fries - boy did they taste good! It's basically Chilli with Chips, Pink Sauce and Cheese and the great thing is it's actually a very simple recipe (one which I must publish soon)!

To make your own, all you need to do is:

  1. Cut some Potatoes into wedges and roast in the oven for 40-50 minutes with some oil
  2. Meanwhile, make a nice Minced Beef Chilli
  3. Also make some Pink Sauce with half Mayo, half Ketchup, a dash of Worcester Sauce and stir well.
  4. Finally, when the Chilli and Wedges are cooked, plate up (and in this order) the Potato Wedges, pour some Chilli over the top, then pour over some Pink Sauce then sprinkle with some grated Cheddar Cheese.
