Egg Fried Rice Recipe
   Serves: 2 | Prep time: | Cooking time: 473 Calories & 13.3g fat per serving.
  • 2 Spring onions
  • 3 Garlic cloves
  • Oil (to fry)
  • 150g Frozen sweetcorn
  • 150g Frozen peas
  • 80g Pre-cooked prawns
  • Salt & Pepper
  • 3 Eggs
  • Cooked white rice (90g pre-cooked weight)

Directions

My quick and easy egg fried rice recipe is perfect to make at home. It can be easily adapted to a vegetarian dish by removing the prawns.

  1. Finely chop the spring onions and garlic cloves.
  2. Heat some oil in a frying pan and fry the spring onions and garlic for 5 minutes.
  3. Add the sweetcorn, peas and prawns to the pan then season generously.
  4. Fry for a further 3-4 minutes.
  5. Crack the eggs into a jug and whisk with a folk.
  6. Pour the egg into the pan along with the rice.
  7. Stir everything together over a low heat until the egg has just cooked. Serve and enjoy.
