How to cook scallops in a pan

Cooking perfect scallops that taste fresh straight from the pan needn't be difficult. Here I show you how to cook scallops in a pan by cooking them in oil.

  1. Firstly, heat some oil over a high heat in a good quality non-stick frying pan.
  2. When the oil is piping hot, carefully place the scallops around the edge of the pan (because this is where the oil and juices will run to).
  3. Keep moving the scallops around to make sure nothing sticks.
  4. Once they’re all browned on one side, carefully flip them over.
  5. Add more oil if the pan is becoming dry, or if the scallops are beginning to stick.
  6. Continue browning on the other side whilst moving them around the pan.
  7. When hot through and browned on all sides, serve on a fresh bed of salad, drizzled with lemon and enjoy.
